Is there a way to un-weld something after its been saved and undo is not available?

You would have to go to node edit, break the node apart at the area, and rearrange them and reconnect them in a way that matches how they were before the weld.

Draw a line or box through the part completely. Extend it past the part actually. Do an XOR weld, then go back and delete the parts that were over extended.

Not a bad solution, both methods work depending on the shape of the part where you need to unweld.
